Characteristics

 Production area: Etna, northern slope, Pontale Palino district

 Altitude: 650 m above sea level, organic, sulfur dioxide

 Soil: volcanic, rich in potassium and iron

 Training system: spurred cordon

 Average age of vineyards: 10 years

 Harvest: October/November

 Vinification: Maceration with the pomace for approximately 10 days. Fermentation with selected yeasts in rotating horizontal steel vats for approximately 12 days at temperatures of 22/24°C.

 Maturation and Refinement: large Slavonian oak barrels for at least 6 months, bottle for at least 4 months

 Visual: ruby red, transparent and bright

 Olfactory: elegant and typical nose of the territory characterized by mineral notes, sweet spices, citrus and berry notes

 Palate and aroma: A fine and balanced wine, with a very fresh palate, well-balanced by fine, velvety tannins. A savory finish.

 Recommended glass: Burgundy, large and rounded

 Pairings: We recommend linguine with meat sauce, succulent meat-based second courses, medium/highly matured cheeses and all the typical vegetable and meat-based gastronomic specialties of the Mediterranean tradition.
